lemon-soy sauce chicken cutlets


Enough kugels and quiches!give us meat! ok, because you asked so nicely I have no reason not to share with you this amazingly easy and amazingly delicious recipe. When it comes to poultry, I'm a big chicken breast fan but I have recently discovered that a whole lot of people are not. This recipe is perfect for everyone because it combines the convenience of boneless chicken pieces while actually being made of thighs so all of you dry-phobic people can get your moneys worth. Speaking of money, buying boness chicken thighs can be quite an expensive expedition and you know I wouldn't subject you to that kind of cruelness. That's why I'm here to tell you that you can debone the chicken thighs all on your own and spend that extra money on dessert or something. Obviously, the marinade can be used on other chicken parts- and that includes white meat, if you're brave like me.

Ingredients:
4-8 boneless chicken cutlets
juice of 1 lemon (I won't tell if you use bottled-that would be about a 1\3 of a cup)
3 Tablespoons of soy sauce
salt and pepper to taste
chopped parsley to taste (totally optional)

1. Place chicken pieces in a baking dish in one layer and season with salt and pepper
2. Pour the lemon juice and soy sauce over the chicken pieces
3. Sprinkle parsley if desired
4. Bake uncovered for an hour on medium heat (350 F\ 180 C)
